Great title, very inspiring. I always plan not to write anything before six o’clock but that’s not happening. Today, as I worried about the skewers, I woke up at 5. I have to make the most of the time left until I have to leave the house, right? Well, let’s make the most of it by offering you a really simple recipe, with low expectations but great results. For each serving you need a chicken thigh, two tablespoons of pealed and crushed tomatoes, half a green onion, half a garlic clove and a bit of patience. You should add the spices to taste, but it’s better to balance them.
In the oiled skillet I put the chicken, the green onion and the garlic. Here, for two servings.
After the chicken changed its color (it’s important not to turn the heat too high, it would be such a shame to burn then I added the seasonings: a bit of pepper, a bit of cumin, a bit of dill. And salt, to accompany the flavors.
Towards the end, I added a handful of parsley and orach. I already had them, I had nothing to do with them, so I got carried away. It wasn’t bad.
This dish can be eaten with rice, pasta, polenta, potatoes, peas, green peas or bread.
