Baked vegetables with urdă (cheese) and tomatoes

Two days ago I pulled over at the Mărăști market place. I was with my bike, it was raining heavily and they have covers. I didn’t need anything, but since I got there, I bought a bit of this and some of that. For examples, a kilogram of really small new potatoes, smaller than an egg – 60 bani. Yes, you read well. A bunch of carrots and another one of parsley: 1,5 lei (the lady who sold them to me was generous, either because of the rain or maybe due to the fact that I was soaking wet).
Three tomatoes and half a kilogram of urdă (cheese) – approximately seven lei. I got home and…
I washed the vegetables and put them into the cast iron skillet (I had boiled beets, garlic and thyme at home).

Over the vegetables I poured a cup of water and two tablespoons of olive oil and I sprinkled salt and pepper.

And a bit of cumin. Then I put them into the oven. 20 minutes at 200 degrees Celsius.

After ten minutes, they looked like this:

With the urdă (cheese), parsley and a bit of oil I made a salad.

The roasted pepper is a bonus, I had it from the previous day.

Was it good? It was great!
