When it comes to chilled refreshing beverages, I am sometimes satisfied with the combination of milk and some fruit, as long as it’s cold. Usually, during the process, the milk becomes slightly warmer, due to the mechanical friction. In order to handle this problem, I either place an ice cube (two, three, depending on the quantity of milk) in the processor, or I put the beverage in a bottle which I leave in the freezer for a few minutes.
What are my favorite combinations? Strawberry, banana, sweetened condensed milk and fresh milk. Banana, blackberry, raspberry, cranberry (I don’t mention the two types of milk, as I use them every time). Melon, peach, nectarine, to which I add two tarragon leaves, a pinch of Maldon salt and a tablespoon of honey. If I add honey, I do not add the condensed milk.
If I use fruit with small seeds (raspberries, blackberries, currants), I strain the beverage after removing it from the blender. Regarding proportions, I consider they should be adjusted according to taste, and you are on your own here. However, I can tell you that to a liter of milk I add 250-280 grams of fruit. I don’t like this beverage too thick, too consistent.
I’m not afraid to use herbs, but I make sure I don’t go too far. Basil and strawberries are a good match, so are tarragon and peaches, mint and raspberry, lemon balm can be added to almost any combination but with mindfulness, as too much of any aromatic leaf can push the taste of the milk beverage into the wrong direction.
