For half a kilogram of flour I add one egg, two tablespoons of sugar, a cup of milk, a pinch of salt, a bit of lemon zest, a bit of cinnamon, the seeds from half a vanilla pod, 100 milliliters of oil (this way I don’t have to put oil in the skillet) and a cup of sparkling water. I whisk well and, if needed, I thin it with a bit of sparkling water. It’s simple. Depending on the diameter of the skillet, I can have 15-20 crepes from this. I will fill them with what I have. Maybe with some plum jam, with blackberry or blueberry jam, maybe with chocolate, maybe with all of these. The crepes are quickly disappearing from the pile. Stay healthy.
